I have had to reevaluate what I eat if I want to be healthier in all areas of my life. My mom has had to go through something similar and because of her problems, is on a very strict diet that is gluten and dairy free. She had sent me some information at the end of 2010 regarding some of my problems, and I read through it, but was not serious enough to want to start anything. I couldn't wrap my head around it and frankly I was scared. Scared I was not going to be able to eat what I wanted. Scared that I was going to be on this bland diet eating nothing but salads all day, every day, and I really didn't want to. But then, with a flare-up again at the end of August, I made the decision to follow this diet to the tee. I was off of all sugars, refined and processed foods, and anything that could be broken down into sugars in my body. It was definitely hard, but I managed to lose a couple pounds. I felt wonderful; I felt healthy; I felt alive! Then, I fell off the wagon and started eating the not-sp-healthy things again. My girth increased, my slugishness returned and I was feeling rather blah. After a calorie and sugar laden holiday season, I am trying very hard to return to that point of healthy. One of the things I have discovered is this awesome salad. I love it!! It is very filling, and I love all the fresh ingredients. It is a snap to whip up and is a wonderfully, light dinner.<br />

<b>Tomato, Avocado, and Millet Salad</b><br />
Adapted from a recipe found on the Candida diet<br />
1 cup millet, cooked and cooled slightly<br />
1 avocado<br />
1 Roma tomato or 15 cherry tomatoes<br />
2 cloves garlic, minced<br />
1 TBSP olive oil<br />
Juice of 1 lime<br />
Few sprigs of cilantro, chopped<br />
<br />
Peel, seed and chop the avocado. Chop the tomato into bite-sized pieces or halve the cherry tomatoes. In a bowl, combine all the ingredients and toss to coat. Enjoy! <br />

<i>Checkered Fences</i> by Alma Hudson is the story of Diane Jones-a young black girl growing up in California during the 1970s. Her life has not been easy. She is determined to never have to depend on a man for anything. After seeing her mother suffer so much at the hands of her father, Diane is determined to not make those same mistakes. When Diane meets David Shaw-the eldest son of the couple for whom she nannies-she is bothered by the fact that she feels an instant attraction for him. Not only is he a male, but he is a white male and the son of her employer. She is determined to do everything to not fall for him, however, David makes it very difficult when all of his attention is focused on her. <br />
<br />
This story was very poignant and while it dealt with such themes as abuse and discrimination, which I have never dealt with, I was still able to relate to Diane. I was able to relate to her humble upbringing, her desire to finish college and her drive to work hard. Ms. Hudson developed characters that were believable, and showed raw emotions through small snippets of the days. I was pleased to see the transformation take place in Diane. She realizes that not all men are abusers like her father, and that David only has her best interests in mind with the attention he gives to her. She is used to being invisible, but with David she is invisible no more. This book was a delight to read, and one that I had a very hard time putting down. A short novella great for an afternoon read!<br />

I couldn't find any recipes that suited what I wanted, so I just added a little bit of this and a little bit of that and voila! here it is.<br />

<b>Southwest Slow Cooker Chicken</b><br />
2 boneless, skinless chicken breasts<br />
1 24-oz. jar of salsa (I use one that has corn and black beans in it)<br />
1 can black beans, drained and rinsed<br />
1 can whole kernel corn, drained and rinsed<br />
1 can of petite diced tomatoes (DO NOT DRAIN)<br />
1 packet of taco seasoning<br />
<br />
Place all ingredients in the slow cooker. Cook on LOW for 4-6 hours or HIGH for 2-3 hours. It will seem really soupy, but once the chicken is cooked thoroughly, use two forks to shred the chicken. This will thicken it up. Serve with tortilla chips, shredded lettuce, cheese, olives, sour cream, etc. It is quite tasty and quite addicting. I am always on the lookout for places to purchase toys that will enhance learning and creativity rather than just sit there. I am not one for video games all day, and would much rather my children play with things that will help them to learn about the world around them. That’s why I don’t have baby-proof locks on my kitchen cabinets where pots, pans and plastic cups are. I don’t mind if my almost 1-year old pulls these things out and bangs them around. It usually ends up with her older sisters, ages 5 and 6, banging along with her or pulling out my baking dishes and pretending to make cookies or cupcakes or soup. And as cool as he would like to seem, my 11-year old son will play along with them. <br />

When I came across <a href="http://www.ebeanstalk.com">ebeanstalk.com</a>, the first thing that caught my attention was the Tin Can Robot set featured on the home page as a toy geared towards 12 years and older. My first reaction was “That looks so cool! My son would love that!” As my eyes skimmed across the page, I noticed the side bar where there are <a href="http://www.ebeanstalk.com">Toys by Age</a>. What impressed me the most was the fact that it was broken out by age per year (i.e. 4 years old, 7 years old, etc.) instead of general age ranges, which I find on many other sites. I have been looking for an <a href="http://www.ebeanstalk.com/ageSelectionSingleGifts.php">age-appropriate</a> toy for my soon to be one year old, and after browsing other sites looking for age-appropriate toys, I was frustrated with what I had found. Most other sites use the search criteria of Birth to 24 months. This is a broad age range which doesn’t help me when looking for a toy for my 1 year old. However, <a href="http://www.ebeanstalk.com">ebeanstalk.com</a> does have it broken down by age category and then target age which is the age when most children will be ready for that toy.<br />

Another thing that I like about <a href="http://www.ebeanstalk.com">ebeanstalk.com</a> was the fact that each of these learning toys and books have been selected by Child Development experts. They have tested and reviewed the products to ensure the <a href="http://www.ebeanstalk.com/ageSelectionSingleGifts.php">age-appropriateness</a> and how it will help a child to learn through play. One thing I would like to see, however, would be customer reviews as well. I know when I go to buy toys, I like to read what other customers have thought of a specific item before I make the decision to buy. <br />

Overall, I would rate ebeanstalk.com as a 4.5 out of 5. It is comprehensive, easy to use and there is a broad range of <a href="http://www.ebeanstalk.com">learning toys</a> for all ages. I would like to see a place where customers can rate and review products as well, rather than just liking it via Facebook. It is heartwarming and tender. He has created very likable characters (Natalie, Leah and Emmett) as well as despicable characters (Kemp, Wes and Morty). While the story seems to jump around a lot at the beginning, the fluidity in which the story moved worked with the pieces. I absolutely hated Kemp and his selfishness, but Natalie and her selflessness was enough of a balance. This story was one that was difficult to put down and I thoroughly enjoyed it. As I read this unbiased history of the past twenty years, I was reminded of events that had happened along the way, which brought back distinct and poignant memories. Events such as the crumbling of the Berlin Wall, Operation Desert Storm, the Oklahoma City bombing, the Columbine High School massacre and September 11th to name a few. As I read, I would have flashes of memories where I remembered where I was and what I was doing when social and or political events significantly impacted me. <span style="font-style:italic;">A Century Turns</span> is a history book and while at a couple points did seem to read as a textbook, there are enough anecdotal stories in which one could see an inside glimpse of more the Washington political scene. This is a recommended read for all to remember where we came from to see where we are going because it seems to be that every twenty years or so, history repeats itself. My husband decided to get a babysitter and take me to dinner rather than bring the whole family with us. I had a coupon for a Free Pizookie (more about that later), so I opted to go there. This restaurant opened locally about 2 years ago and it is still a happening place. There is always a crowd. So, we picked up the babysitter and headed out for dinner (we did bring the youngest munchkin with us because she will not stay with anyone but Mom). The wait was not too bad. I had called ahead of time and put our name on the waiting list (I highly recommend you do this, too!). The atmosphere is casual, so I wasn't expecting a quiet intimate dinner, but it also wasn't overly casual with TVs all over. They were placed where you could see them but they were not the focal point. While BJ's is a brewhouse and does make their own ale, we are not drinkers, so I had a water and my husband had a strawberry lemonade. The water was good...I know that sounds weird, but I have been to other places where you can tell the water came directly from the tap and it is rather nasty. But this was quite refreshing. And the strawberry lemonade....divine! It was even a little thick but very tasty!! We skipped the appetizers and went right for dinner. I was not in the mood for pizza, so we looked at the dinner selections. I chose the Angus Pot Roast Sandwich. It is "tender Angus beef pot roast slices are served on a toasted garlic cheese French roll and topped with white cheddar mashed potatoes and mushroom brown gravy. Served<br />with oven roasted vegetables." This was melt-in-your-mouth delicious! The meat just melted, the potatoes were the perfect compliment and the bread balanced it all out. The vegetables were good, but a little dry. The portion was just the right size. I finished it all but I was not stuffed. The hubby ordered Texas-Style Chicken Fried Steak. It is "a hearty serving of seasoned Angus Sirloins, fried to a golden brown and served with white cheddar mashed potatoes, pepper cream gravy and seasoned, steamed vegetables." It was delicious, too, although the kick of pepper in it was a little too hot for me. I actually preferred the steamed vegetables he had. He had a better variety and they were still tender crisp. Very yummy. His portion came with two pieces of steak, and so we took one home along with some mashed potatoes. And then came the moment I was waiting for. Pizookie!!! A pizookie is a "freshly baked, hot out of the oven, rich and delicious cookie topped with two scoops of vanilla bean ice cream and served in its own deep dish.Your choice of Chocolate Chunk, White Chocolate Macadamia Nut, Peanut Butter or Oatmeal Raisin Walnut." I love white chocolate and macadamia nuts, so we opted for that one. We decided to split it. It smelled divine. And when I bit into it, heaven! It was warm, moist, gooey...then mixed with the ice cream, just heaven. <br /><br />Overall, my experience at BJ's Restaurant and Brewhouse was fantastic. The service was great, the prices were very reasonable, and the food was just divine. Overall, we gave it 4 thumbs up!! The stories become a reality. Seeing his opportunity, Skeeter, tries to manipulate the stories to make his life "better"; however, along the way he discovers that it is not all about him. In the end, he is able to control his destiny on his own and without silly stories. Yum!)<br />2 tsp Worcestershire sauce<br />3/4 tsp ground ginger (plus a little extra to season meat)<br />1/2 tsp. dried onions<br />1/2 c. white grape-peach juice<br />salt and pepper<br /><br />To prepare the meat: Season each side with salt, pepper and ground ginger. I use sea salt and just barely sprinkle on the meat. In a hot skillet coated with cooking spray, sear the porkchops for 2 minutes on each side. Remove from skillet. Add ginger-peach sauce and juice to pan and scrape all those yummy bits off the pan. Replace porkchops in pan. Reduce heat to low. Cover and let simmer for 5-7 minutes or until meat is no longer pink and juices run clear. This can be served over rice with sauce or by itself.
